The Terroir
Our property is in the village of CELLES-sur-OURCE, 500 inhabitants.
In the South of the Champagne Region, the vineyeard of Celles lies on the sunny slopes of the Ource valley. Thus, the vine plantations can enjoy the deep chalk sub-soil topped up with clay and limestones, the core conditions to grow vines in order to make champagne.
Indeed, the limestones in the soil act like a sponge absorbing extra rain water during winter, keeping humidity for the roots in summer, and regulating temperature at the same time.
These conditions give the wine of Champagne its flavour resulting in a unique bouquet which one cannot find anywhere else in the world. |
